Best Practices for Optimal Oil

Whether you use a purifier like FriPura or not – there are certain guidelines you should follow to keep your oil in peak condition.

Looking after your oil will lengthen its useful life, and ensure your food has a consitent and great taste.

If you do choose to use a purifier, these tips will make sure you get the most out of your investment.

Remove Debris & Filter Daily​

Be sure to skim any visible food particles from the oil whenever is convenient. Then at the end of each day, run your oil through a filter to remove all remaining debris. Without filtering frequently, the oil will deteriorate faster and the taste of the food will be affected.

Regularly Test Oil Quality​

In order to know when your oil is ready to be changed, run daily checks with a Testo 270 Oil Tester or 3M Oil Test Strips (or similar). This way you ensure oil changes happen at a convenient time, and the oil lasts as long as possible without overstaying its welcome.

KEEP A LOG

Keep a checklist of the regular tasks that are performed, so that you don’t miss anything and all staff are clear on what’s been done and what needs doing.

DON'T OVER-USE

Don’t keep your fryer on when it’s not needed. You don’t just waste energy – the oil continues to degrade at hot temperatures even without food frying.

CHECK TEMPERATURE

Make sure the fryer is run at the optimal temperature for cooking, and is not set unnecessarily high. Oil will break down faster at higher temperatures.

AVOID SOAP

Some of the chemicals in soap will break down the oil. Only wash the inside of the fryer with hot water, and be sure to thoroughly rinse soap off any tools.

AVOID WATER

Water is also bad for oil life extension – so take care to properly dry any washing implements, and avoid excess ice from frozen foods.

AVOID SALT

Another enemy of oil is salt – so try to season food after cooking. Otherwise, add salt away from the fryer so excess particles don’t end up in the oil.
